Making pudding with chia seeds

Lately, I have been doing recipe development with chia seeds. I bought a bag of chia seeds, thinking that I'd put them in my protein shake. I then had a parfait in the Twin Cities that had a layer of chia seeds in a pudding form. I got inspired to try and make my own pudding.

It has been fun testing out recipes. Chia seeds are interesting. They absorb so much liquid. I've been having chia seeds in pudding form for the last few days. I like them.

Here's my attempt at a layer of dark chocolate coconut chia seed with a top layer of orange cream oat beverage yogurt. The bottom has mashed berries. I added protein powder to both layers.
 

I'm still working out my recipes as I go. It has been enjoyable so far.

Weekend cooking and trip planing

The weekend is here. Yay!

I'm thinking of making shakshouka this weekend. I have never made it before, but the combination of eggs with tomatoes, onions, garlic, and spices makes me want to give it a try.

I booked my plane ticket to return to the Twin Cities. I'm taking in a couple of hockey games. It'll be a combination of work and time off.

Rummy bears

The other night, I made rummy bears. Yep, they are gummy bears soaked in rum.


 
My friend noticed my gummy bears loaded tea. It had a few gummies in it. She gave me her recipe to make rummy bears:
  1. Place gummy bears in an air-tight container.
  2. Fill the container with your favourite rum (I used Cruzan coconut rum) such that it barely covers the gummies and stir.
  3. Let them soak overnight.
  4. Take them out of the boozy solution to dry and bounce back to gummy form.
  5. Eat!
They had full coconut rum and fruit flavours. So good! I'm sure that they'd taste good with vodka, too.

My gummies were lower in sugar. They worked out nicely!

Keep out of reach of children, if they last that long... haha!

Stuffed peppers and the weekend

I have never made stuffed peppers in my life. I saw some red and orange bell peppers when I was at the grocery store and decided get some. I hope to make this recipe on the weekend. I won't be adding rice in it, which makes it non-traditional.

This workweek feels long. I am ready for the weekend.

Glee making ghee

Yesterday, I did something different. I made ghee.



I bought a jar a few months ago and have since been in love with the nutty taste of ghee. I was down to the last few tablespoons and went looking for a jar last week. The supermarket that I was at did not have any.

I met up with a friend afterwards and mentioned it in passing. She told me that she makes her own ghee and it's pretty straightforward.

She was right. I made mine in thirty minutes.

I use ghee all the time. It's keto-friendly and it's nice that the milk solids are gone because I am borderline lactose-intolerant.

I won't be buying ghee. It's enjoyable making my own.

Snow, errands, and recipes

It's snowing. I was hoping to run an errand later on today, but I think that I'll just stay at home and try on Sunday instead.

This business has curbside pickup from Wednesday through Friday, and Sunday. I am typically running errands on Saturday. So, I have either Friday or Sunday to drop by the store and pick up a couple of orders.

It used to be open on Saturdays. However, with this second pandemic lockdown, it has revised its hours. 

At least I get to stay home all warm and cozy. I am currently going through a new cookbook, dreaming about which recipe to try first.

Cookbook and charging adapter from Amazon Prime Days

I participated in my first Amazon Prime Days event. I typically don't have a thing to buy. However, there were a few things that I wanted this year.

One was a vegan recipe book. I'm not vegan. The fact that the recipes are dairy-free suit me, as I'm borderline lactose-intolerant.

I got a charging adapter that has more electrical outlets, including three USB ports. I installed it in the basement. 

This charging adapter is perfect. It has a screw that stays put when plugged into the wall outlet. I needed it and solves my issue with any plug that wouldn't stay plugged in. Yay!

Last summer feel when it's practically autumn

Saturday felt like a warm summer day. I took advantage of the day by heading over to a park in Port Perry and getting ice cream.

Last weekend, I was doing work. This weekend, I am focusing on relaxing and unwinding. It's quite the contrast.

It's nice that I am cooking more these days. On Saturday, I made myself breakfast, consisting of an omelette, bacon, and perogies. On Friday, I got a new container for my Vitamix where I can whip up mousse and more. I need to find a recipe and give it a try.
