Shakshouka

Today, I made Shakshouka for the first time. It worked out well. It's essentially sauteed onions, red bell peppers, garlic, and spices, with tomatoes added in and simmered. You then add eggs and have them steamed with a lid on.

Here's my plated result:


I am thrilled that it turned out well. It's so easy to make. I'd make it again.

Glee making ghee

Yesterday, I did something different. I made ghee.



I bought a jar a few months ago and have since been in love with the nutty taste of ghee. I was down to the last few tablespoons and went looking for a jar last week. The supermarket that I was at did not have any.

I met up with a friend afterwards and mentioned it in passing. She told me that she makes her own ghee and it's pretty straightforward.

She was right. I made mine in thirty minutes.

I use ghee all the time. It's keto-friendly and it's nice that the milk solids are gone because I am borderline lactose-intolerant.

I won't be buying ghee. It's enjoyable making my own.

Taking it easy and cooking this weekend

It has been a relaxing weekend. I went out to fetch groceries and run errands yesterday, which I enjoyed. Today, I have been lounging around. I made breakfast and lunch, which I like doing on an easy Sunday.

I made banana bread french toast this morning. It turned out nicely. It was my first time making it.

I overdid buying dessert yesterday. I have Japanese-style cheesecake and cheese tarts, and banana bread. I'm glad that I thought about making banana bread french toast. It would be more difficult doing it with cheesecake!

Sleep and rain

I took a bit of a break. I didn't sleep well on Saturday night, so I decided to take half a sick day on Monday. I did sleep like a rock on Sunday. I needed the rest.

It's raining right now. I love how it sounds. It's so calming. It has been so hot outside that it's nice that there's a bit of relief.

Taking it easy and looking forward to a long weekend

I spent Monday taking it easy. I needed a break from work.

I watched touching videos about Regis Philbin and reminisced about how much I loved watching him on television. He was a sweet, decent man. I am sad about his passing.

This weekend is a long one, with Civic Holiday on Monday. I look forward to taking a break. I would normally do a road trip and stay at a hotel somewhere, but I don't feel right about doing one during a pandemic. Instead, I will continue going out to visit a new business or restaurant, and keep things local and low key.
